500 gms mutton pieces/meat cut and washed well
3 tbsp edible oil
3 medium sized onions finely sliced
1 tbsp ginger garlic paste
salt to taste
1 tbsp red chilli powder
¼ tsp turmeric powder
1 tbsp coriander seeds powder
½ tsp cumin seeds powder
2 tomatoes finely chopped
1 cup yogurt/curd
2 tbsp chopped coriander leaves
1 tsp mutton masala powder

How to make Mutton Masala

. Firstly, take a pressure cooker, add oil into it and heat it.
. Add sliced onions and fry them till they turn slight golden color.
. Add ginger garlic paste and saute for few minutes.
. Add the mutton pieces and roast them until a change in color appears.
. Add salt, red chilli powder, turmeric powder, coriander seeds powder, cumin seeds powder, mutton masala powder, mix well and cook for about 2-3 minutes on low flame.
. Add the chopped tomatoes, mix and cook for two to three minutes until tomatoes get soft.
. Add the beaten yogurt/curd into it.
. Cook until oil appears at the corners.
. Add little water, add chopped coriander leaves and pressure cook until mutton gets tender.
. Reduce the steam.
. Lastly add garam masala powder and cook on sim flame for about two minutes.
. Switch off the flame.
. Garnish with coriander leaves.
. Serve hot with rice or roti.

How to make Mutton Kathi Roll

 For Marination of Mutton:

. Add ginger, garlic paste, salt, turmeric, red chili powder, coriander powder, cumin powder and lemon juice, chopped green chili and little oil.

. In a pan add oil and let it get hot. Then add mutton pieces to it.

. After stirring it add water for deglazing.

. When the water reduces to sauce add 2/3 of pan with water and let it simmer for 45 mins.

. Cover it with a lid.

. After 45 minutes open the lid and let all the water soaked up.

. Make a hole in center of chapatti.

. On a tava add oil, then place a chapatti and break egg on the chapatti.

. Scramble the egg , season it with salt and pepper.

. Turn the chapatti upside down.

. Now place the mutton pieces on egg chapatti, add jullion  onion and chat masala.

. Roll them up.

. Serve hot.

How to make Mutton Biryani Recipe

. Marinate the meat in curd taken in a bowl.
. Roast cardamom, cinnamon, peppercorns cloves. Make a fine powder.
. Grind ginger, red chillies, green chillies, half the onions, garlic and dried kernel of the coconut.
. Now heat fat in a pan. Add chopped onions and ground spices.
. Fry until onions turn golden brown.
. Now add meat and fry well. Add poppy seed powder.
. Add salt and remaining curd. Cook till meat becomes tender
. Add powdered spices to it and remove from the flame.
. Fry remaining onions in fat in a separate pan.
. Add cloves and bay leaf.
. Fry for few minutes and add rice.
. Fry for another few minutes.
. Put salt to taste and make the quantity of water double.
. Remove from the flame when rice gets cooked and no moisture is left.
. Arrange a part of cooked rice in a pan and sprinkle saffron water over it.
. Place the meat over it and cover with rice layer once again.
. Garnish with fried onions and nuts.
. Mutton Biryani is ready.

How to make Mutton Fry :

. Take a pressure cooker and put it on flame.
. Add all the ingredients to pressure cook.
. Close cooker & pressure-cook mutton.
. Heat oil in a kadai and add curry leaves, slit green chillies and then add chopped onions.
. Fry till lightly brown and then add ginger garlic paste and fry.
. Add cooked meat, garam masala powder to it and mix well.
. Stir and fry well till the water evaporates and mutton turns brown.
. Garnish with cilantro leaves.
