CABBAGE STUFFED PARATHA RECIPE

Ingredients

For the dough:

1 cup atta/ wheat flour
1 tsp oil
Water
Salt, to taste

For the stuffing:

1 cup cabbage, chopped
1/2 cup onion, finely chopped
2 small boiled potatoes, mashed
2 Tbsp coriander leaves, chopped
1/2 tsp ajwain
1/2 tsp garam masala powder
1/2 tsp red chilli powder
Salt, to taste
1/2 tsp zeera
1/2 tsp heeng (Asafoetida)
2 Tbsp oil

How to make cabbage stuffed paratha
To make the dough:

. Mix flour, salt, oil (if needed), ajwain and water to make a soft pliable dough (not sticky). Let it set as you prepare the stuffing.

For the stuffing:

. Heat 2 tbsp oil in a pan and add zeera, hing. Now add chopped cabbage, onion, mashed potatoes and mix well.

. Add salt as needed, coriander leaves and other spices.

. Do not cover the pan and cook till the water evaporates.

. Remove the stuffing from the pan and set aside to cool.

Making parathas:

. Now divide the prepared dough into small equal size balls.

. Take one portion/ball and roll with a rolling-pin. Make a small roti and place a 1 Tbsp of prepared stuffing on the center.

. Cover from all the side, dust some flour and roll again to make a proper paratha.

. Make sure the stuffing should not come out, for that seal the sides with some water on the edges so the stuffing does not come out.

. Heat a tawa and drizzle few drops of oil.

. Place the stuffed paratha gently on the tawa and roast it from both sides by greasing it with oil or ghee.

. Serve hot with curd and pickle of your choice.

CARROT PARATHA RECIPE

Ingredients:

3 cups Wheat flour
1 Carrots (peeled and grated)
1 Onion (chopped)
1tsp Chilli powder
1/2tsp Turmeric powder
1tsp Coriander powder
1tsp Cumin seeds
2tbsp Coriander leaves (chopped)
Salt to taste

How to make Carrot Paratha

. Take the grated carrot in a bowl.

. Add the onions, coriander leaves, chilli powder, turmeric powder, coriander powder, cumin seeds and salt.

. Pour in the flour.

. Mix well, add enough water to make a dough.

. Add more flour if the dough is too sticky.

. Make small balls of the dough and roll into flat rounds using circular motions.

. Fry well on a heated tawa on both sides until done.

. Serve hot with pickle and yoghurt.

Ingredients

250 gms maida
1 tsp sugar
100 ml milk
2 Tbsp oil
1 tsp desi ghee

How to make Malabar Parantha

. Make a dough of maida with sugar & milk.

. Add oil & knead well till it turns glutinous.

. Make dough balls & roll it out into a thin roti.

. Pleat it from one edge, and gently stretch the dough.

. Roll inwards from other end and tuck the other end inside.

. Press the dough gently & roll it out with a rolling pin.

. Fry it with desi ghee.

. Serve hot.

EGG PARATHA RECIPE

Ingredients:

For the paratha:
Wheat flour: 3cups
Oil: 1tsp
Salt to taste

For the filling

Eggs: 3
Onion: 1 (big)
Tomato: 1
Green chillies: 2
Ginger garlic paste: 1/2tsp
Turmeric powder: 1/4tsp
Garam masala: 1/2tsp
Coriander leaves: 1tbsp (finely chopped)
Oil
Salt to taste

How to make Egg Paratha

.Take the ingredients for the paratha and with required amount of water, knead to a soft dough. Keep aside.

. For the filling, chop the onion, tomato and green chillies finely.

. Beat the eggs with salt and keep aside.

. Heat oil in a pan and saute the onions until transparent.

. Add the green chillies along with the ginger garlic paste and fry for another minute.

. Put in the dry powders and tomato. Cook until pulpy.

. Add the coriander leaves and egg mixture little at a time beating well till it forms a dry mixture.

. To make the egg paratha, roll out the dough, put 2 spoonfuls of the egg mixture cover and roll out again.

. Heat a tawa and fry the paratha on both sides, until brown.

. Serve hot with ketchup or yoghurt.

ALOO PARATHA RECIPE

Ingredients

250 gm whole wheat flour
Pinch of salt
1 cup water
50 ml oil

For the filling:

500 gm potatoes
20 gm coriander leaves
20 gm ginger garlic paste
75 gm onions
5 gm green chillies
5 gm turmeric
5 gm chilli powder
10 ml lime juice
Oil for frying

How to make Aloo Paratha

. Make a soft dough with the specified ingredients.

. Divide the dough into balls, as per the required size.

. Chop the onions, green chillies and the coriander leaves. Then boil the potatoes; remove the skin and mash.

. Add the rest of the ingredients and mix well.  Take each portion of the dough, flatten it on palm.

. Stuff the filling in the dough and roll into balls.  With a rolling pin, flatten the balls into 1/2″ thick round parathas.

. Grease a pan with a little oil and heat on a medium flame.

. Cook the parathas until both sides are golden and cooked through.

. Knead a dough combining wheat flour, maida, salt & ghee.

. Add black salt, red chilli powder, chaat masala to pudina powder.

. Add ghee, dust with flour, sprinkle pudina mixture over strips.

. Overlay them by crossing it with each other.

. Pat into a square & roll out gently again.

4 cup wheat flour
1 green chilli
2 garlic
5-6 green onion leaves
1 tsp jeera
1/2  tsp kasuri methi
1 tsp desi ghee

. Knead a dough using wheat flour, Jeera, salt and kasuri methi.
