Ingredients

For the marinade:

250 gm boneless chicken- cut into 3 cm cubes
6-7 garlic pods
2.5 cm ginger piece
1/4 tsp white pepper powder
1/4 tsp red chilli powder
1/4 tsp salt
1/2 tsp garam masala
1 tsp coriander powder
2 tsp lemon juice

    For the batter:

1 egg
2 Tbsp gram flour
2 Tbsp refined flour
2 tsp lemon juice
1/2 tsp red chilli powder
1/4 tsp salt
1/2 tsp garam masala
Oil to deep fry

How to make Chicken Pakoda

. Marinate the chicken with ginger-garlic paste.

. Add the remaining ingredients.

. Keep aside for at least an hour.

. Mix together all the ingredients for the batter and beat thoroughly.

. Heat oil in a kadahi.

. Dip a marinated chicken piece in the batter and deep-fry until crisp and golden brown.

. Repeat with the remaining chicken pieces, draining excess oil on absorbent kitchen paper.

. Serve with mint chutney.

How to make Kerala Roast Chicken

. Clean the chicken and make a few slits in both sides.

. Mix 1 tsp garam masala, coriander powder, chilli powder, turmeric, pepper powder with 2 tsp garlic and 2 tsp ginger paste.  Make a smooth paste.

. Marinate chicken in this paste both inside and outside for an hour.

. Heat the oil. Fry the sliced onion, green chilly, curry leaves till onion becomes brown.

. Add remaining ginger and garlic paste and garam masala.

. Add chopped tomato (small slices). Stir it till oil clears.

. Add soya sauce and place the chicken.

. Add 1/2 cup water.

. Cover the frying pan and boil it.

. Remove the cover two or three times and transpose the sides till the chicken is golden and roasted.

How to make Kadai Chicken

. Marinate chicken with the ingredients mentioned and keep it aside for a while.

. Grind all the ingredients for the tomato paste into a fine paste.

. In a frying pan, shallow fry chicken pieces to light brown color.

. In the same oil add onion, ginger and green chillies for sauteing and stir till onion turn golden brown.

. Add chilli powder, turmeric powder, garam masala and kasuri methi.

. Now add the tomato mixture and a cup of water.

. Once it boils, add fried chicken pieces and mix everything together.

. Add a little bit of salt if required.

. Pop the lid on and cook for 10 minutes on medium heat.

. Once finished cooking, add a cup of cream to give it a rich taste.

How to make Crispy Fried Chicken Curry

. Cut 4 chicken breasts in length.

. Add pounded jeera, saunf, ginger-garlic paste, red chilli powder, dhaniya powder, turmeric powder, lemon juice, black pepper to the chicken, mix well.

. Now, add chopped garlic and curry leaves to it.

. Add refined flour and rice flour to the bowl.

. Add pounded saunf, jeera , salt, red chilli powder, turmeric powder, dhaniya powder and mix well.

. Add soda .

. Add Oil to a pan.

. Dip chicken pieces in batter and deep fry.

For Dip

How to make Eggless Banana Cake

. Sift the flour and baking powder.

100 gm compound dark chocolate

2 eggs

How to make Ragi Chocolate Cake

. Preheat the oven at 100 degree C.

. Break the compound chocolate into smaller chunks and melt them in a double boiler. Keep it aside and let it cool completely.

. In a mixing bowl, whisk the eggs till light and fluffy. Add the sugar, a teaspoon at a time, and continue whisking until well combined.

. Combine the melted chocolate with melted butter and mix well. Pour this into the egg and sugar mixture, and whisk well.

. Sift together the ragi flour and baking powder. Add it, a teaspoon at a time to the above mixture while you continue folding. Ensure that no lumps are left behind but do not over mix.

. Transfer to a small baking tin (6 inch diameter). Bake in the oven at 150 degree C for 15 minutes or until a skewer inserted at the centre of the tin comes out clean.

1 large capsicum-chopped fine

    For sauce, mix together:

3 Tbsp corn flour-blended
1/2 cup water
2 Tbsp vinegar
2 tsp salt
2 tsp soya sauce
1/2 cup tomato puree
2 Tbsp chopped celery or 1/4 tsp celery salt
2 cups water

How to make Chicken Manchurian

. Mix together the chicken, egg, flour, garlic and ginger paste, ajino moto and enough water so as to have a thick batter. Leave this for 5-10 minutes.

. Heat the oil, keeping the heat high drop heaped teaspoonfuls of batter and fry to a golden brown. Drain on absorbent paper till required.

. Heat 2 Tbsp of oil, and stir-fry the garlic and onion in it over high heat, till the onions look glossy. Add the capsicum and turn around a few times.

. Add the sauce mixture, and simmer till the sauce thickens and becomes translucent.

500 gm cauliflower (gobhi) – cut into small florets
2 tsp salt
1 egg
1/2 cup corn flour

How to make Chilli Gobi

. Mix together the gobhi, 1 tsp salt, egg, corn flour, garlic, ginger and enough water to have the pieces coated with the mixture.

. Heat the oil, and fry over medium heat to a golden color.

. Heat 2 tbsp of the oil in a wok, and stir fry the onions in it over high heat till they look wet.

. Add the green chillies and stir a few times, add the remaining salt, soya sauce, vinegar, and the gobhi.

. Mix well, and serve garnished with some greens.

. If you like the gobhi softer, you can blanch it before adding it to the batter ingredients.

. Mix together the egg, flour, garlic and ginger paste, ajino moto and enough water so as to have a thickish batter. Coat the baby corn with this batter and leave for 5-10 minutes.

. Heat the oil and keeping the heat high drop baby corns, one at a time and fry to a golden brown.

. Drain on absorbent paper till required.

. Heat the 2 Tbsp oil, and stir-fry the garlic and onion in it over high heat, till the onions look glossy.
